Eleven groups of talented culinary and baking students from Humber College are taking on the challenge of transforming Edo Japan’s menu into gourmet creations! The competition will take place on October 24, featuring alumni chefs on the judging panel.

Judges

Adam Lafleur – Constantine Restaurant

Adam Lafleur, named Top 30 under 30 in Canadian Hospitality 2023, is currently the Chef de Cuisine at Constantine, a fine dining Mediterranean Restaurant in Downtown Toronto. After leaving his studies at University to attend Humber’s Culinary Management Program, Adam has worked at some of Canada’s top culinary institutions including Glen Abbey Golf Club and Hexagon in Oakville.  Adam has a vested interest in the future of Canada’s restaurant culture, food heritage, and sustainability.

Daniel Calabrese – King Edward Hotel

Chef Daniel Calabrese stands at the pinnacle of culinary excellence, earning acclaim as the Canadian Culinary Federation’s 2023 Young Chef of the Year. His culinary journey extends to global stages, where he secured Gold Medals at both the Culinary World Cup and the prestigious IKA Culinary Olympics. Daniel’s culinary artistry transcends borders, weaving a narrative of innovation and talent in the kitchen.

Gina Antonacci – Vice President, Humber College

Dr. Gina Antonacci is the senior vice-president, academic (SVPA) at Humber Polytechnic. Gina began her career at Humber as a part-time faculty member in the Police Foundations Program. She then went on to become a program coordinator, associate dean, senior dean and associate vice-president, academic. Before joining Humber, Gina worked for the Ontario Ministry of Correctional Services as a probation and parole officer and a senior staff development officer.

Rob Yu – Executive Chef, Yokai Izakaya

Chef Rob Yu is the executive chef at Yokai Izakaya located in Vaughan, ON. With over 15 years of industry experience collectively in Canada and The United Arab Emirates, he brings a plethora of experience in various cuisines such as Italian, French, Japanese, Mediterranean, And Filipino with a primary focus on impactful flavours. The Former Humber Culinary Management student was awarded Top 30 under 30 in Canadian Hospitality in 2023. That same year Yokai Izakaya was awarded with Toronto Life’s 7th best new restaurant 2023.

Ted Reader – “Godfather of the Grill”

Known as the “Godfather of the Grill”, his charm and fearless culinary spirit has led Ted to become an award-winning chef, author, food and product innovator.  Ted has parlayed his passion for food into a culinary tour de force that includes more than a dozen cookbooks, food products, live culinary performances, TV and Radio cooking shows and appearances, a catering company, teacher and his newest venture BBQ restaurant owner of “The Joint” at the Eldorado Golf Club.
